Organic Brut Rosé Cava Reserva

CAVA TYPE: Brut Reserva Vegan-friendly. Certified by the “Spanish Vegetarian Union”. Organic viticulture certified by the Catalan Council of Organic Agricultural Production.

PRODUCTION AREA: Alt Penedès. Designation of Cava origin. Vine’s age is about 28 years old. The orography of the land makes this vineyard 300m above sea level in a North orientation, and together with an extremely calcareous terrain makes this variety express its full potential by providing freshness and aromas of white fruit and citrus.

CLIMATOLOGY: Mild and dry winter. Mild spring with some rain. Few fungal treatments due to a dry summer and warmer than normal. Maturation has been advanced by 15 days. Healthy and excellent quality harvest.

HARVEST: Selection of manual grapes in the vineyard itself. Harvest during the 1st week of August. Harvest only from the vineyards of our plantation.

Grape VARIETY: Pinot Noir 100%.

ELABORATION: Total destemming. Pre-fermentative cold maceration at 14ºC in a stainless steel vat for 6 hours. Obtaining the flowering must by bleeding. Clarification of the must by static decantation. Fermentation of the must at a controlled temperature in a stainless steel tank for 20 days. After a first transfer, the wine remains in contact with its own lies during the winter until it is stabilised by cold and filtered. The second fermentation is done inside the bottle and we use selected yeasts.

BOTTLING: Bottling on the property in March 2023.

AGING: Aging in the cellar for at least 18 months at a constant temperature of 16ºC.

PRODUCTION:
Limited to 6.000 bottles.
