
TYPE OF WINE: Cabernet Sauvignon red wine, the age of the vineyard is 29 years. Vegan-friendly. Certified by the “Spanish Vegetarian Union”. Organic viticulture certified by the Catalan Council of Organic Agricultural Production.
PRODUCTION AREA: Designation of origin Penedès. Alt Penedès. Mas Codina Plantation. Own vineyards located in the heart of Penedès. The orography of the land makes this vineyard 300m above sea level with South orientation, with slope and with an extremely calcareous terrain, makes this variety express its full potential by providing aromas of black fruit, red and silky tannins.
CLIMATOLOGY: Mild winter with some rain. Mild spring with no rain. Few fungal treatments due to a warm and dry summer. The ripening has been correct despite the complications that have occurred in the last moment due to the rain. Manual selection of the grapes in the vineyard itself. Healthy and quality harvest.
HARVEST: Harvest and selection of manual grapes in the vineyard itself. Harvest during the 3rd week of September 2021. Harvest only from the vineyards of the Mas Codina plantation
GRAPE VARIETY: Cabernet Sauvignon 100%.
ELABORATION: Total destemming. Alcoholic fermentation of the must and maceration in a stainless steel vat for 12 days at 25ºC. Maceration with two daily stirrings. Alcoholic fermentation with selected yeasts. Malolactic fermentation with native bacteria. The wine keeps contact with its own lies (bâtonnage) until it is transferred to the barrels. Use of 500lt French and Hungarian oak. This year there are 16% new barrels. This Cabernet Sauvignon has been made without sulphites. Only at the time of bottling SO2 is added.
AGEING: 6 months in a stainless steel vat, 12 months in oak barrels.
BOTTLING: Bottled on the property in April 2023.
PRODUCTION:
Limited to 8,000 bottles.
