
CAVA TYPE: Brut Nature Gran Reserva Vegan-friendly. Certified by the “Spanish Vegetarian Union”. Organic viticulture certified by the Catalan Council of Organic Agricultural Production.
PRODUCTION AREA: Alt Penedès. Designation of Cava origin. The age of the vineyards is between 30 – 50 years. The vineyards of Mas Codina completely surround the winery, located on the coasts of the Bribons stream, between 250 and 300 metres above sea level, which allows us to have vineyards planted with north, east and south orientations. This torrent favors the creation of different microclimates that in the cavas give them very complex aromas and flavors that are only found in this area. The “Terroir” is sandy clay loam with a lot of lime.
CLIMATOLOGY: Mild winter with some rain. Mild spring with no rain. Few fungal treatments due to a warm and dry summer. The ripening has been correct despite the complications that have occurred in the last moment due to the rain. Manual selection of the grapes in the vineyard itself. Healthy and quality harvest.
HARVEST: Selection of manual grapes in the vineyard itself. Harvest from the 2nd week of August until the 3rd week of September. Harvest only from the vineyards of our plantation.
Grape VARIETIES: Macabeo 40%, Xarel·lo 30%, Chardonnay 20% and Pinot Noir 10%
ELABORATION: Total destemming. Decrease in the temperature of the grapes to 18 ºC. Obtaining the flowering must by pressing at low pressures with pneumatic press. Clarification of the must by static decantation. First alcoholic fermentation of the clean must at a controlled temperature in stainless steel tanks. The wine keeps contact with its lies until it is stabilised. Second alcoholic fermentation in the bottle and in the cellar in the dark at a temperature of 16ºC.
BOTTLING: Bottling on the property in March 2023.
AGING: Aging in the cellar with a minimum of 30 months at a constant temperature of 16ºC.
